tamale all about it!

I love me some tamales! But the only thing is that I don't have the time (or rather kind of lazy) to make tamales on my own. Even though it's not authentic, I find that pot pies that mimic tamales are something that I can definitely do.

Since I like the ease of making casseroles, this tamale pie was something they've been wanting to make. I've been experimenting with different ingredients inside the pie and so far this is the most of that been happy with. It's got a lot of feeling and as much vegetables I can fit in. Add some extra toppings and this makes a great meal!

Chicken Tamale Pie
(makes one large pot)

Filling:
4lbs skinless boneless chicken, cubed
1 tbsp olive oil
1 tbsp bottled minced black garlic
1 tsp chili powder
1 tsp paprika
1 tsp Jen's everything seasoning
1/2 tsp ground cumin
1/2 tsp ancho chile powder
1/2 tsp onion powder
1/2 tsp pepper
1/2 tsp salt
2 bay leaves
1 large onion, diced
1 large poblano chile, diced
1 can black beans, drained & washed
1 can sweet corn, drained
1 medium zucchini, diced
1/4 cup finely chopped cilantro, divided
1 large can Las Palmas mild/medium enchilada sauce
1 tsp better than bouillon, chicken bouillon​
2 tbsp masa flour

Cornbread Topping:
Dry Ingredients
    2 cups  cornmeal
    1 cup all-purpose flour
    2 tsp baking powder
    1/2 tsp Himalayan pink salt
Wet Ingredients
    2 cups milk (room temperature)
    2 tsp organic apple cider vinegar
    5 tbsp salted butter (melted/liquid)
    1 small can chopped jalapenos, drained 
    1/4 cup canned corn

1/4 cup Mexican cheese blend
sour cream for serving
finely chopped red onion for serving
hot sauce for serving

Heat 6 quart dutch oven. Mix chicken, black garlic, and spices then add to hot pan to brown. Add onions and poblano and cook until onions are translucent. Add black, beans, corn, zucchini, and half of cilantro. Cook for 10 minutes then add enchilada sauce, bouillon, and masa flour. Cook mixture until thickened and reduced by 1/4. Remove from heat set aside.

Preheat oven to 350F degrees.

Combine together wet ingredients for cornbread in a small bowl until frothy.  In a separate bowl, mix dry ingredients together.  Combine wet ingredients with dry ingredients and mix until just combined. Top filling with cornbread mixture then with Mexican cheese blend. Bake in oven until cornbread is cooked through and filling is bubbly, about 30-35 minutes.

Serve with sour cream, finely chopped onions, olives, and hot sauce.

meat.



I'm not a big red meat eater. Most of the stuff that I make tend to be poultry based. For me, whenever I eat red meat, I end up feeling heavy afterwards. The hubby, however, is definitely a meat eater.

When I went grocery shopping last week, I had picked up a steak for him but had no idea what to do with it. A quick search on pinterest resulted in this recipe that didn't seem too hard to make. And as an added bonus, I had everything that was called for. So, I went ahead and made it. If I do make this again, I think I would do the pan juices as suggested as my steak came out a little dry. Well...I also can't cook steak so there's that too. Practice, practice, practice!!

Flank Steak Stuffed with Sun-Dried Tomatoes, Goat Cheese, and Basil
(from Elly Says Opa!)

10 oz. (ish) flank steak
2 oz. goat cheese, brought to room temperature to soften
1/4 cup sundried tomatoes, drained and chopped
3 Tbsp. fresh basil, chopped
salt and pepper
1 Tbsp. olive oil

Optional pan sauce:
1 clove garlic, minced
3 Tbsp. white wine

 
Preheat the oven to 400.

Butterfly the flank steak, and then pound is to flatten it slightly. Sprinkle both sides of the steak with salt and pepper.

In a bowl, combine the softened goat cheese, sundried tomatoes, basil, a few grinds of pepper. Spread the mixture on top of the flank steak, and then roll it up to form a log. Secure the steak with kitchen twine or toothpicks.

Heat a large, ovenproof skillet over medium heat and add the olive oil. Add the flank steak and brown it on all sides. Place the flank steak in the oven to finish cooking to your desired level of doneness (about 12 minutes for me). Place the steak under a foil tent to rest for 5-10 minutes before slicing.


If you want to make a pan sauce, put the same pan you cooked the steak in over medium heat on your stovetop. Add the garlic and saute until fragrant. Add the wine and deglaze the pan, scraping up all the browned bits (and, whatever you do, don’t touch the handle without an oven mitt). Reduce the sauce slightly and then season to taste with salt and pepper if necessary. Strain and serve over the flank steak.

big bang and dinner.



just a quick post. had my sister over last night and made some delicious food. For the main we made some broiled chicken and for the sides we did asparagus with leeks and bacon with caramelized onion and goat cheese mashed potatoes. Couple that with a four hour marathon of big bang theory and you got yourself a good night! XD life is good. :)

 
Easy Garlic Broiled Chicken
(from All Recipes)

1/2 cup butter
3 tbsp sminced garlic
3 tbsp soy sauce
1/4 tsp black pepper
1 tbsp dried parsley
6 boneless chicken thighs, with skin
dried parsley, to taste

1. Preheat the oven broiler. Lightly grease a baking pan.

2. In a microwave safe bowl, mix the butter, garlic, soy sauce, pepper, and parsley. Cook 2 minutes on High in the microwave, or until butter is melted.

3. Arrange chicken on the baking pan, and coat with the butter mixture, reserving some of the mixture for basting.

4. Broil chicken 20 minutes in the preheated oven, until juices run clear, turning occasionally and basting with remaining butter mixture. Sprinkle with parsley to serve.

 


Absurdly Addictive Asparagus
(from Food52)

4 ounces pancetta, cut into 3/8 inch to 1/4 inch dice
1 tablespoon butter
1 pound asparagus, woody ends trimmed and sliced into 2 inch pieces on the bias
1 1/4 cup leek, thinly sliced crosswise (white and pale green parts only)
2 cloves garlic, minced
Zest of one lemon
1 teaspoon orange zest
2 tablespoons toasted pine nuts
1-2 tablespoon Italian parsley, chopped
Salt and freshly ground pepper to taste

1. In a large non-stick pan, sauté pancetta, stirring frequently, over medium heat, until crisp and lightly golden.

2. Add 1 tablespoon of butter to pan. Add asparagus pieces and leek and sauté until asparagus is tender crisp, about 3-4 minutes.

3. Add garlic, lemon and orange zest, toasted pine nuts and parsley and sauté for about 1 minute, until fragrant. Season to taste with freshly ground pepper and salt and serve immediately.

 


Mashed Potatoes with Caramelized Onions and Goat Cheese
(from Food52)

4 tablespoons unsalted butter, divided use
1 tablespoon olive oil
1.5 pounds yellow onions (approximately 2 large onions), thinly sliced
Kosher salt
1/4 teaspoon sugar
3 pounds Russet potatoes, peeled and cut into 1-inch pieces
1.5 cups half and half
1 clove garlic, smashed
1 bay leaf
3 ounces goat cheese
Black pepper

1. To make the caramelized onions, heat 2 tablespoons of butter and the olive oil in a large sauté pan over medium heat. Add the sliced onions and stir them to coat with the fat. Add 1/4 teaspoon salt and the sugar and cook, stirring frequently, until onions are golden brown and caramelized, about 30-40 minutes. If the onions get too dry, add a small amount of water to deglaze the pan. Set aside.

2. Place the potatoes in a large pot of cold, salted water. Bring to a boil and cook until fork tender.

3. While the potatoes are cooking, heat the half and half, garlic, bay leaf, and remaining 2 tablespoons of butter in a small saucepan over medium heat.

4. Drain the potatoes and return them to the hot, dry pot. Stir them over low heat for 2 minutes until they are dry. Pass the potatoes through a ricer into a large bowl. Gently stir in the hot cream mixture a little at a time until the potatoes are smooth and creamy (discard the garlic and bay leaf). You may not need to use all of the liquid. Set aside a small amount of the caramelized onions for garnish and stir the remaining onions into the mashed potatoes. Crumble the goat cheese into the potatoes and stir to combine well. Season with salt and black pepper to taste. (deviated from here. i just took out the bay leaf and mashed everything together, stired in 3/4 of the caramelized onions and all of the goat cheese, seasoned it, and garnished it with the rest of the onions while in the pot.)

5. Spoon the mashed potatoes into a serving bowl and garnish with the remaining caramelized onions. Serve hot.

stuffed chickens are cheesy.


well, i've been mia for a little bit. it's probably because it's been so hot this summer that i did not want to cook. since it's been cooling down a bit, i've started to cook a little bit. here was last night's dinner: chicken stuffed with apples and goat cheese.

i thought the choice of dish was appropriate considering fall is just around the corner. (being the experimenter) i went out on a limb and added some paprika, cinnamon (just a wee bit!) and parsley to the breadcrumbs and that made all the difference! it smelled amazing in the oven! that fist bite was even better...the hint of cinnamon and paprika really melded well with the goat cheese and apple filling. and the chicken just sang! very flavorful and delicious! i served it with a side of sauteed green beans and shallots like in the picture. my opinion: this one is a total keeper. :D

 


Chicken Breasts Stuffed with Apple and Goat Cheese
(from Delish)

6 large (about 2 pounds) boneless, skinless chicken breast halves
1/2 teaspoon ground black pepper
1/2 teaspoon salt
3 ounces goat cheese
1 teaspoon finely grated lemon rind
1 large firm apple, peeled, cored, and shredded
All-purpose flour for dusting
1 large egg
1 1/3 cup fresh bread crumbs
1/2 cup grated Parmesan cheese
barely a pinch of cinnamon
1/2 teaspoon paprika
2 tablespoon unsalted butter
2 tablespoon olive oil

1. Place chicken breasts on a large sheet of waxed paper; cover with another sheet of waxed paper. Pound breasts to a 1/4-inch thickness. Remove the top sheet of waxed paper and season with the pepper and salt.

2. Combine the goat cheese, lemon rind, and apple. Divide apple mixture among the chicken breasts and spread the mixture evenly over half the surface of each breast. Fold each breast in half and press the edges together, forming a pocket.

3. Sprinkle the flour onto a sheet of waxed paper. In a small bowl, combine the egg and 1 tablespoon water. In a shallow bowl, combine the bread crumbs and Parmesan cheese (added the cinnamon and paprika here). Dust each breast lightly with flour and dip into egg mixture, moistening all surfaces. Coat with bread crumb mixture, patting the crumbs gently in place. (The chicken can be prepared to this point several hours ahead; cover and refrigerate. When ready to cook, bring the chicken to room temperature.)

4. In a large, heavy skillet, heat butter and oil over medium heat. Add chicken; cook until browned and cooked through, about 7 to 8 minutes per side. Drain on paper towels and serve.

 


Green Beans with Garlic and Shallots
(makes 2 servings)

large handful of green beans
1 to 2 shallots, sliced
2 to 4 cloves garlic, minced
olive oil
salt and pepper
chicken stock or water
parmesan or choice of shredded cheese

Cook shallot and garlic together in a shallow pan with a little bit of olive oil until slightly caramelized. Add the green beans and a couple tablespoons of stock or water and cover. Cook until tender, stirring occasionally. Season with salt and pepper and top with a little bit of shredded cheese.
