jamaican me crazy, mon! lol... :D tonight's dinner was interesting to make. decided to make some jerk chicken. marinated the chicken for about 8 hours then simmered it on the stove-top. i was going to bake it but i didn't feel like turning on the oven. :P then i made some fried rice from this site but slightly modified since i didn't need some of the ingredients it called for, then fried some plantains with coconut oil and some salt. all in all, it was a good dinner. the boyfriend didn't care too much for the bananas but he liked the chicken just fine. :) next stop...maybe russian!
 
Aunty Laide’s Fried Rice
(adapted from Spice Baby)
1 cup rice
1 2/3 cup low sodium chicken broth
2 tbsp butter plus 1 tbsp butter, divided
1/2 tsp of kosher salt
1/4 small onion, chopped
1 can sweet corn
1 to 2 stalks celery, chopped
1/2 cup shredded carrots
1 stalk spring onion, sliced
salt and pepper
Rinse the rice with cold water until the water is clear. Set aside.
Bring the water to boil in a medium sauce pan. Add 1 tbsp of butter to the liquid as well as 1/2 tsp of kosher salt. Once your liquid boils, add the rice then bring it back to a gentle simmer. Cover the pot and turn the heat down to low and cook for 18 to 25 minutes for white rice, or about 30 to 45 for brown rice.
Meanwhile, melt the remaining butter in a separate pan. Add the onion and cook until fragrant. Add corn, celery, and carrots and cook until carrots are tender. Remove from heat and set aside.
When the rice is firm and tender, carefully remove lid. Add the vegetable mixture and the green onion and gently mix all ingredients through rice. Season with salt and pepper as needed. Remove from heat and allow to stand, uncovered, for 10 minutes before serving.
