the "make-do" omelette

so...after tending to lukie at 6am in the morning and taking him to the hospital for strep throat, took him back home and he proptly knocked out after hitting the pillow. this left me with nothing to do and an empty stomach. what to do? i know, an omelette!


so the "make-do" comes from the fact that lukie and his roomate don't have a lot of things in terms of cooking ingredients. but they do have frozen veggies (this one had peppercorn seasoning) and frozen chicken. took about a 1/4 cup of veggies and 1/4 portion of boneless thigh and cooked them with a little bit of salt and pepper. they fortunately also had eggs which i added some dill and parsley, salt and pepper, and milk to make it fluffy!

and fluffy was supposed to work but i either over-beat the egg or put too much milk. eitherway, the egg turned not-so-fluffy. :(


soo, after rushing to put the innards in and turning the damn thing over, i ended up with a crepe-like omelette. i added some good-ol'e processed cheese and since it didn't want to melt with the heat of the food itself, the whole thing was popped in the microwave for about 40 seconds for melty gooeyness. >:D

mmmm.......cheesy tasty goodness. topped with a little pico de gallo salsa, and that was all it needed. not too bad for having a limited amount of ingredients on hand. must work on the "fluffy" part definitely.
